Contrôle le traitement des viandes et s'assure qu'elles sont coupées et taillées selon les normes de la compagnie. Fait les cédules de travail des employés. S'assure du respect des politiques de la compagnie (réception, sécurité, etc.) et des normes d'hygiène, de salubrité, de santé et sécurité au travail. Voit à l'embauche, à l'accueil, à la formation et à l'évaluation des employés. Assiste à certains comités.
